We aim to teach in a way that is not only about the dish that you are making but about the principles of cooking. This allows students to take the skills and tips they have learnt and apply it to their everyday cooking, inspiring them to get in the kitchen more often. 

 

Shop Local and Seasonal

We believe that the best way to reduce your food carbon foot print and get the most flavourful vegetables is to shop locally and seasonally. This is why we buy all of our vegetables, meat and fish at the local Portobello market where, unlike in supermarkets, you can tell what’s in season by what’s available and the produce comes from the UK and European farmers. 

 

Plastic Waste

We do everything we can do consume as little single use plastic as possible. We do this by shopping at the market where the produce is never in single use plastic containers and choosing suppliers that share this belief with us. 

 

Make Cooking Accessible 

We always teach dishes that are simple and recreatable. We do this by sourcing ingredients that are easily available to everyone and by teaching simple, ceative recipes that can become part of your regular meal rota. 

 

Food Waste

We hate food waste, which is why we teach clients to use every part of the ingredients we source and supply eco friendly take away boxes for clients to take away any extras. We have also partnered with Green Dot who take away any waste we do have to a facility that turns it into renewable energy and nutrient rich compost. 

 

Quality of Ingredients

Being Italian, the quality of the ingredients we use it at the heart of what we teach. Using great ingredients allows us to create recipes that are simple, recreateable and delicious. We work with a great selection of suppliers who provide us with the best Italian produce, source our meat from the renowned Provenance butcher, and use the freshest seafood available. 

 

Support small, local suppliers and farmers

We love to buy as much as possible from small independent or family run businesses which is why we buy our vegetables from the market, our meat from the family run butcher Provenance and fish from a small local fishmonger. We also run a market tour class where we introduce all of our favourite local shops to our clients. 

 

Cooking for your mental health and wellbeing

For us cooking is a time to unwind and forget about the outside world. We have created a warm and relaxing environment that allows our guests to feel at home whilst connecting with their creative side and other guests. The food you eat also has a huge impact on your mental health and energy levels which is why we only use quality hormone free meat and cook with plenty of energy boosting vegetables.
