Perhaps not everyone knows that Enrica opened her first cooking school in Cape Town in the early 90’s and it hasn’t stopped since. After London and Venice she decided to pay tribute to Cape Town – a city that welcomed her with love and gifted her with so much satisfaction – returning to open a franchise of her cooking school.
“I would never have entrusted one of my cooking schools to just anyone! It took years of hard work to build up my reputation and to see it grow around the world. The person who represents my name has not only to be extremely experienced and competent but has to use the best products and serve food with the same love and passion that I do.”
Managing the school in Cape Town is Emma Freddi, friend and former student of Enrica’s, with extensive experience in the food industry. She is a bubbly and very warm personality, with the same outlook on life as Enrica. Emma and her then husband moved to Cape Town in 1993, opened a fresh pasta shop. Typical of small Italian shops, food was a passion and of exceptional quality. The original ‘Pasta Freddi’ expanded to three shops, then a factory supplying major supermarket chains and airlines. One day, in 1993, Enrica Rocca walked into Pasta Freddi like a storm, met Emma Freddi, and life was never the same again!
Emma offers courses in authentic Italian and Ligurian cooking, visits to the country’s most important wine producing estates, the opportunity to pick vegetables directly from her kitchen garden and classes in how to make homemade pasta. Emma will make you fall in love with South Africa and will show it to you with the same passion and same love she expresses for relatives and closest of friends when they come to visit her in Constantia.
