Our
aim is to cut through the marketing of London markets to discover the
real produce. We will explore either Borough or Portobello market and
unearth the tastiest ingredients sold by the most interesting
suppliers. We will talk about the advantages of unpasteurised cheeses,
baguettes baked by the hour, the world's best ham, and the importance
of properly ageing meats and, once we get home again we will
investigate best cooking techniques for what we have bought.

Portobello
Market day
The
day begins at 9:00am at the now well known Whole
Food store in Kensington High Street. After investigating
the store, we will visit the fascinating Portobello market, with it’s
vegetables, fish and seafood, olive oil and cheese stalls and by
identify the freshest and most appropiate ingredients on offer, will
create a menu to
suit everyone’s taste.
This is a totally spontaneous food shopping experience, with no
predetermined menu, to give you the opportunity to sselect
mouth-watering
ingredients for your dream meal. Once we have gathered our ingredients
we head to my private home's kitchen, specially designed for the cooking classes, where we will learn some new cooking skills
while creating a great meal.
A wine expert will join the class at 1pm to talk
about the best ways to match great food to great wines. and you will be
able to choose from an extensive list of wines to accompany your meal.
We continue cooking, eating and exchanging tips throughout the day.
Classes end between 5pm and 6pm.
